Lemon Protein “Pound” Cake with only 133 cal/5f/6c/16p per serving!

There’s just something about yummy berry desserts in the summertime! But this one is not like the rest! This “Pound” cake won’t put on the pounds. ️Nope! Ya still can work on that summer bod & enjoy the tastes of summer. How perfect is that?!

The flavors of lemon with berries is actually simply delicious. They compliment each other! One thing I like about using Buttermilk in this recipe is that it gives it that little extra punch…that tang. If you are not big on it, simply sub with your favorite non dairy milk like cashew milk (which is my fav!).

To add extra protein (especially when you need to sneak it in for the kiddos!), I used both whey and casein proteins. The reason for this is that it this formula bakes so much better than whey alone. Casein helps the dessert retain its moistness.

For whey protein, I used About Time in vanilla! It’s my perfect go-to low carb protein that’s clean and easy on my stomach. For the casein, you can use whichever lowest carb you can find. I liked using ON brand for this.

Lemon Protein “Pound” Cake

 

Ingredients:

1.5 scoop About Time Whey isolate*

1 scoop vanilla casein protein

2 eggs

2 egg whites 

1/3 c nonfat Greek yogurt 

1/4 c lemon juice

1/3 c baking stevia

1/4 c lowfat buttermilk

1 tbsp coconut oil

Zest of 2 lemons

1/4 c coconut flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Directions:

Combine wet ingredients. Whisk to mix.

Combine dry together.

Pour dry into wet and mix together.

Pour batter into greased or pregnant lined 9×5 loaf pan (standard size)

Bake at 350F for 25-30 min.

Let cool.

Remove from pan and top with homemade whipped cream or TruWhip…and all the berries.
