Sugar Free Marshmallow Reindeers

 

Aw, my little Rudolph is adorable! Aaaaand tasty 😉

This was a fun holiday treat! First I made my sugar free marshmallows, then used Amber Lyn Chocolates No Sugar Added Milk Chocolate Chunks, pretzels for the antlers, sprinkles for the eyes, tiny pieces of my kids’ red fruit snacks 😉 but you can use any type of red candy (Hot Tamales, etc), and a little bow to dress him up!

Here’s how to make the Sugar Free Marshmallows:

Marshmallow Fluff (before adding powdered sugar on top)

Ingredients:

2 packets of unflavored gelatin

1/2 c cold water

1/4 c NuNaturals NuStevia Simple Syrup

1 c Swerve erythritol (you can can sub in stevia)

1/4 tsp salt

1 tsp vanilla

1 egg white

1/8 c powdered erythritol (you can find it online at NETRITION.com—>link is to the right of my blog or HERE.)

Red Candies, or fruit snacks

Mini Pretzels

Directions:

1. Pour 1/4 cup water into a mixer. Sprinkle gelatin on top. Let sit to soften.

2. Meanwhile, heat 1/4 cup water, simple syrup, erythritol, and salt in a pan while stirring to dissolve the sweetener. Then turn the heat to med-high. Place a candy thermometer in the pan, and wait for the mixture to reach 240F.

3. Once it reaches 240F, pour onto gelatin in the mixer. Stir to dissolve. Place mixer on high for at least 6-8 minutes, or until the mixture (fluff) has doubled in size.

4. Meanwhile, beat egg white until soft peaks are formed.

5. When the fluff is ready, pour in egg white and vanilla. Beat until mixed.

6. Quickly pour fluff mixture onto a parchment paper lined 8×8 pan. Spread evenly.

7. Dust the top with powdered erythritol sweetener.

8. Refrigerate for several hours before cutting.

Once you are ready to cut your marshmallows, melt about 1/2 cup Amber Lyn Chocolates No Sugar Added Milk Chocolate Chunks.  Dip your marshmallows in the chocolate, stick with lollipop sticks, and place on a pan lined with parchment. Add your reindeer’s eyes, nose and pretzel antlers. The antlers were tricky but just aim to cut them in half. I used regular store brand mini pretzels. Refrigerate to set up.

Add your now and whala!!! Rudolph is sugar free!!

Sugar Free Bark with Amber Lyn Chocolates

What you will need:

2.5oz (about 1/4 cup) Amber Lyn Chocolates Sugar Free Dark Baking Chocolate + additional 0.5oz for topping.

2 oz Amber Lyn Chocolates No Sugar Added White Baking Chocolates + 0.5oz for topping.

1/8 c toasted sliced almonds, chopped.

Parchment paper, cookie cutters.

 

Directions:

Place parchment paper on a cookie sheet. Place 4 cookie cutters on top.

Melt 2.5oz of dark chocolates in microwave, stirring every 30 sec. Pour into 4 cookie cutters.

Melt 2 oz of white chocolate in microwave. Drizzle on top of dark chocolate.

This is what it will look like:

Take a toothpick and swirl. Add almonds and extra chocolate.

Place in freezer for 10 min or more. Gently pop out the bark from the cookie cutters. Keep chilled.

Yep, this was what I was singing as I made my post workout CHOCOLATE MINT PROTEIN FROSTY🙌 My kids think I’m nuts, but how can you NOT be excited to drink this deliciousness?!?! THAT would be craziness☝️FROSTYs are the BEST!!

Chocolate Mint Protein Frosty with Infinite Labs Whey

 

This yummy treat is easy to make. I used Infinite Labs 100% Whey Isolate vanilla and used unsweetened cocoa, but you can use chocolate whey as well. Adjust protein serving according to your goals💪

Chocolate Mint Protein Frosty

1.5 scoop vanilla Infinite Labs 100% Whey Isolate

3 tsp unsweetened cocoa

about 2 tsp NuNaturals NuStevia Cocoa Mint Syrup  (this is your mint and sweetener all in one!)

1/2 frozen banana

1 tsp xanthan gum

1/2c water (or almond milk)

5-6 ice cubes

Blend all together.

Top with Market Pantry Chocolate Whipped Cream (I’m so obsessed with this stuff!!!) and some crushed candy cane for aesthetics!👌

Macros for frosty not including toppings: 294 cals, 3G fat, 13g net carbs, 2g sugar, 39g protein.

These pancakes are made with the new products I purchased from Infinite Labs! I have been using Infinite Labs 100% Whey Isolate protein (which is deeelish!) and found out they make a Sweet Potato powder! Sweet potatoes that you don’t have to cook…wow! Anything to cut down on my time in the kitchen on busy days is helpful…am I right?!? I just HAD to try it out!

So here’s my first recipe using the Sweet Potato powder and also the 100% Whey Isolate (the purest form of whey protein that aids in lean muscle growth and fat loss). Hope you all enjoy!! Recipe:

Low Carb Cinnamon Roll Pancakes

2 scoops Infinite Labs Sweet Potato
1 scoop Infinite Labs 100% Whey Isolate vanilla
1/2 tsp baking powder
2 tbsp unsweetened applesauce
1 egg white
1 tbsp unsweetened almond milk or water
1 full drop of NuNaturals vanilla stevia
1/2 tsp cinnamon

Topping:

1. Protein Frosting: 1/2 scoop Infinite Labs 100% Whey Isolate vanilla mixed with 1 tbsp unsweetened almond milk or water.

The protein egg nog is overflowing! A special thank you to my friend Joyce @ponytailpower on Instagram for sharing her Protein Egg Nog recipe! I was soooooo excited after my leg workout to make this shake!! You all seriously have to try it! It’s so simple, yet so creamy & dreamy lol! No need for real Egg Nog when you have this healthier version!! Here’s Joyce’s recipe:

Protein Nog

1/2 scoop Infinite Labs vanilla whey isolate protein
1/2 c pasteurized egg whites
1/2 c unsweetened vanilla almond milk
1 full drop full of NuNaturals vanilla stevia drops
1/2 frozen banana
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp xantham gum
4 ice cubes
BLEND TOGETHER.

Topped with FF whipped cream and sprinkles!🎉

Macros without topping:
171 cals, 3G fat, 17g carbs, 3G fiber, 2g sugar, 26g protein.

Low Carb Protein Cupcake

Ingredients:

1 Krush Birthday Cake Protein Bar

1/2 scoop vanilla casein

1/4 scoop vanilla whey

5 tbsp water

5 drops NuNaturals vanilla stevia drops.

Directions:

Stir protein, water and stevia drops together. Consistency should be thick like icing. Place in freezer if it needs to firm up.

Heat Krush Bar in the microwave for 5 seconds in order to soften it. Mold it into a cooking sprayed cupcake pan. Bake at 350 for 4 minutes (careful not to overcook!).

Remove from oven and cool. Fill cupcake with protein frosting and top with sprinkles. 🎉

Macros: 332 cals, 10g fat, 9g NET carbs (28g carbs-19g fiber), 3G sugar, 40g protein.

Truly, this stack is one of my most yummiest!! Lots of happinessss goin on all over these babies!! FlapJacked Buttermilk Protein Pancake mix, my Protein Icing, and topped with a little Black ‘n White chocolate-ness: Cookie Department AWAKEN BAKED espresso chocolate cookie with Sweet Spreads White Chocolate Coconutter drizzzzzled all over 🙂 What a healthy treat for breakfast!

Pancakes:

-1/2 c FlapJacked Buttermilk pancake mix

-1/3 c water
Protein Icing:

Any one tired of baking and cooking from Thanksgiving?? It’s so important to get back on track right after indulging on a holiday, but the downside is that you are tired from the preparing for the actual holiday! Am I right? Well, here’s a little treat that is easy and will help ease the pain of getting back on track (psst…more trickery for your body!).

– 1 Krush Bars Raw Cookie Dough Protein Bar

– 1/4 scoop Chocolate Protein (whey or casein)

– 1 tbsp Nonfat Plain Greek Yogurt

– 1 tsp unsweetened cocoa

– Stevia to taste

– 2-3 Amber Lyn Chocolates Dark Chocolate Chunks

How to make it:

– Microwave Raw Cookie Dough Krush Protein Bar for 10 seconds to soften. Cut in half. Press down to form 2 cookies and bake on a sprayed cookie sheet for 5 min at 350F.

– Stir together 1 tbsp nonfat plain Greek yogurt, 1/4 scoop chocolate protein (whey or casein), 1 tsp unsweetened cocoa, & stevia to sweeten to taste. Place in freezer until firms up.

– Top with 2 Amber Lyn Chocolates sugar free dark chocolate chunks melted, and a few cut up for good measure 🙂 YUM!!
