I was meal prepping for a camping trip my family and I went on this weekend. I needed quick, easy foods that didn’t require a microwave to heat up. Enter these muffins!! Thanks to Pumped Up Pancakes, this recipe was a cinch! I also added Amber Lyn Chocolates‘ aaaamazing sugar free chocolates (holy crap they are goooood!). I also included one of my most favorite brands of stevia: NuNaturals. They were a hit!
Easy Protein Muffins
Stir and bake in cupcake pan at 350F for about 8 minutes.
I placed an Amber Lyn Chocolates Sugar Free Milk Chocolate Chunk in the middle of each muffin, and also added another on top.
These guys turned out absolutely delicious and perfect take-along on our camping trip this weekend!!
Makes 6 muffins. Macros per muffin including chocolate: 164 cals, 9g fat, 19g carbs, 2g fiber, 5g sugar, 8g protein–(10g carbs are sugar alcohols, and it’s 8g net carbs).
Macros without chocolate: 70 cals, 1g fat, 9g carbs, 2g fiber, 3.6g sugar, 7g protein.
