I’m FlapJackin-it this morning with these amazing, moist and fluffy FlapJacked Cinnamon Apple Protein Pancake mix!!! Say Whaaat?? Come on Yvette, pancakes on a weekday?? YEP!! So yum and my whole family enjoyed them!! Layered them with vanilla protein icing and topped with a quick apple compote & sugar free syrup with sprinkle of cinnamon. Boom! Fast, easy and wholesome breakfast to fuel our bodies to kick bootie today.
For the pancakes:
1/2 cup FlapJacked Cinnamon Apple Protein Pancake Mix
1/3 cup water
-Just stir together and cook in a pan on low heat.
1/4 scoop vanilla casein + 1/4 scoop vanilla whey protein ( or you can use just one or the other).
1-2 tbsp water depending on the desired thickness of your icing.
2 drops of NuNaturals Vanilla Stevia drops.
-Stir together and layer between pancakes.
Quick Apple Compote:
1/2 apple peeled and chopped.
-Combine in a bowl with a splash of water and drizzle of sugar free syrup (I use Joseph’s Maple Syrup and it can be purchased through my link for Netrition.com to the right of my page)
-Microwave for about 1 min until soft.
-Assemble your pancakes, sprinkle a little cinnamon, and enjoy!!
Macros for pancakes (no toppings and protein icing): 180 cals, 2.5g fat, 21g net carbs, 9g sugar, 15g protein.

So here is my meal of Cookie Deptartment GREAT FULL sweet potato & cranberry cookie (vegan) topped with my protein icing:
1/4 scoop vanilla casein + 1/4 scoop vanilla whey +1 tbsp water + 4 drops of NuNaturals Cherry Vanilla stevia drops (aaaaamazingly Delish!).
Added the final touch of Amber Lyn Chocolates Sugar Free Dark Chocolate Almonds, crushed.
So so so goooooood! Perfect taste of the holidays!
Chocolate covered strawberry lovers unite! This delicious and easy recipe allowed me to have dessert for breakfast without the guilt!! Using Pumped Up Pancakes protein pancake mix, NuNaturals NuStevia Cocoa Syrup, and Amber Lyn Chocolates Sugar Free Dark Chocolate Chunks all allowed these Chocolate Strawberry Protein Pancakes to be low carb, low sugar, and packed with protein! It looks like to I spent a ton of time on it, but thanks to these amazing products…it was quick ‘n easy! You can say you “slaved” over it 😉
Chocolate Strawberry Protein Pancakes
1/2 cup Pumped Up Pancakes
3/4 cups water
1 tbsp unsweetened cocoa
1/2 packet NuNaturals stevia
1/4 scoop vanilla casein protein
2-3 tbsp water
2 tsp sugar free strawberry jelly
NuNaturals NuStevia NEW Cocoa Syrup
Amber Lyn Chocolates Sugar Free Dark Chocolate Chunks
Mix pancake ingredients together and cook in a pan.
Stir filling ingredients together and fill in between pancake layers and a dollop on top.
Add sliced strawberries, chopped dark chocolate chunks, and cocoa syrup 👌
Macros for all pancakes and filling: 257 cals, 5g fat, 29g carbs, 8g fiber (21g NET carbs!), 9g sugar, 27g protein.
These brownies are only 70 cals & 3g net carbs per brownie! I used Amber Lyn Chocolates amazingly delicious No Sugar Added White Chocolate Chunks and I seriously can’t tell they are sugar free! WOW! And NuNaturals NuStevia NoCarbs Blend adds the perfect amount of sweetness with out having to use a ton in the recipe. A little goes a long way!
➡️I made these brownies special for my 11 yr old niece who recently discovered that she is diabetic. So as you can see, I have another purpose in creating my low sugar, healthy treats. I aim to help all who are in need of yummy dessert alternatives. Whether it’s diet recipes, diabetic recipes, and even gluten free recipes…I will strive to create them!! NO ONE, especially children, should ever feel deprived!
Low Carb Peanut Butter Brownies with White Chocolate Chunks
1/2 cup coconut flour
1/4 cup unsweetened cocoa
1.5 tbsp NuNaturals NuStevia NoCarbs blend (You will need to use more if using regular stevia)
1 tsp baking soda
2 tbsp natural peanut butter
2 tbsp unsweetened applesauce
2 egg whites
1 tbsp coconut oil
1 tsp vanilla
1/2 cup unsweetened almond milk
1 oz Amber Lyn Chocolates No Sugar Added White Chocolate Chunks, chopped.
Mix together the ingredients.
Stir in chocolate. Pour in a cooking sprayed 8×8 pan. Bake at 350F for about 9 minutes.
Let cool then slice. Add a few more of Amber Lyn Chocolates amazing white chocolate chunks on top for extra yumminess☺️
Makes 12 brownies.
Macros per brownie with chocolates: 70 calories, 5g fat, 6g carbs, 3g fiber, 1g sugar, 3g protein.
Easy Protein Muffins made with Pumped Up Pancakes mix and Sugar Free Amber Lyn Chocolates!
I was meal prepping for a camping trip my family and I went on this weekend. I needed quick, easy foods that didn’t require a microwave to heat up. Enter these muffins!! Thanks to Pumped Up Pancakes, this recipe was a cinch! I also added Amber Lyn Chocolates‘ aaaamazing sugar free chocolates (holy crap they are goooood!). I also included one of my most favorite brands of stevia: NuNaturals. They were a hit!
Easy Protein Muffins
1 cup Pumped Up Pancakes mix
3 tbsp unsweetened applesauce
2 packets of NuNaturals stevia
1/2 cup water
Stir and bake in cupcake pan at 350F for about 8 minutes.
I placed an Amber Lyn Chocolates Sugar Free Milk Chocolate Chunk in the middle of each muffin, and also added another on top.
These guys turned out absolutely delicious and perfect take-along on our camping trip this weekend!!
Makes 6 muffins. Macros per muffin including chocolate: 164 cals, 9g fat, 19g carbs, 2g fiber, 5g sugar, 8g protein–(10g carbs are sugar alcohols, and it’s 8g net carbs).
Macros without chocolate: 70 cals, 1g fat, 9g carbs, 2g fiber, 3.6g sugar, 7g protein.
I’ve been doing some extra homework on sugar free sweeteners, and found some great articles on Erythritol! It’s naturally occuring in fruit, and…
-It contains almost no calories.
-It has 70% of the sweetness of sugar.
-It doesn’t raise blood sugar or insulin levels.
-Human studies show very little side effects… mainly minor digestive issues in some people.
-Studies where animals are fed massive amounts for long periods of time show no adverse effects.
Of course all things in moderation, but this alternative sweetener gets many thumbs up!
