Craving cookies? I sure am! Here’s a modified cookie recipe that is diet friendly…and you can eat the whole plate full!! YES!!

This recipe includes low glycemic carbs & sugars (all natural), heart healthy fats (PB & Coconut Butter spread), and protein packed! Tastes like dessert, feels like you are indulging, BUT you are eating healthy and clean! It’s all about tricking the mind and taste buds πŸ˜‰

Sweet Potato Protein Cookies

Cookies:
5oz cooked sweet potato, cooled & skin removed
1 tbsp creamy natural peanut butter

1 egg white
1/2 tsp baking powder
1/2 tsp vanilla
1 pkt stevia
Dash of Cinnamon

Topping:
1/2 tbsp @SweetSpreads Cinnamon Roll Coconutter (coconut butter). Available at http://www.SweetSpreads.com

Mash sweet potato in a bowl with a fork. Stir in PB, egg white, protein, baking powder, egg white, vanilla & stevia.

Line a baking sheet with parchment paper (or pan spray) and bake at 350F for 9-10 min. Length of time depends on the size of your cookies!

Remove from oven and cool.

Drizzle with @SweetSpreads Cinnamon Roll coconutter
