Craving cookies? I sure am! Here’s a modified cookie recipe that is diet friendly…and you can eat the whole plate full!! YES!!

This recipe includes low glycemic carbs & sugars (all natural), heart healthy fats (PB & Coconut Butter spread), and protein packed! Tastes like dessert, feels like you are indulging, BUT you are eating healthy and clean! It’s all about tricking the mind and taste buds 😉

Sweet Potato Protein Cookies

Cookies:
5oz cooked sweet potato, cooled & skin removed
1 tbsp creamy natural peanut butter

1 egg white
1/2 tsp baking powder
1/2 tsp vanilla
1 pkt stevia
Dash of Cinnamon

Topping:
1/2 tbsp @SweetSpreads Cinnamon Roll Coconutter (coconut butter). Available at http://www.SweetSpreads.com

Mash sweet potato in a bowl with a fork. Stir in PB, egg white, protein, baking powder, egg white, vanilla & stevia.

Line a baking sheet with parchment paper (or pan spray) and bake at 350F for 9-10 min. Length of time depends on the size of your cookies!

Remove from oven and cool.

Drizzle with @SweetSpreads Cinnamon Roll coconutter

It’s Pancake Saturday once again!!! This is one of my favorite recipes! Simple, easy, and is 100% healthy! Perfect fuel to start your day!

Mocha Latte Protein Pancakes

1/2 c oats
1/2 scoop About Time chocolate whey
2 egg whites
1 tsp baking powder
1 tsp instant espresso
1 pkt stevia
1/8 c unsweetened almond milk

Add all ingredients in a food processor or blender.
Cook in a sprayed pan.

Chocolate Espresso Frosting:
1-1/2 tbsp plain nonfat Greek yogurt
1/4 scoop About Time chocolate protein (whey or Night Time Recovery casein)
1/2 tsp instant espresso
1/2 tsp unsweetened cocoa
1 pkt stevia
1 tsp unsweetened almond milk

Stir all together in a bowl. Layer in between your pancakes. I topped mine with the final bit of frosting and a little whipped cream.

Pancakes: 239 cals, 3g fat, 28g carbs, 4g fiber, 0g sugar, 24g protein
Frosting: 60 cals, 2g fat, 4g carbs, 1g fiber, 9g protein
TOTAL: 299 cals, 5g fat, 27g net carbs (minus fiber content from carbs), 33g protein

Protein Carrot Cake Cupcakes with Vanilla Yogurt Frosting

Carrot Cake Cupcakes:
4 pitted dates
1 whole egg
1/2c chopped carrots
1/2c oat flour
1/2c (about 2 scoops) About Time vanilla protein (or cinnamon flavor!)
1 c unsweetened almond milk
1/2c stevia
1 tsp cinnamon
1 tsp Chinese 5 spice powder (opt)
2 tsp baking powder
1 tsp vanilla

Vanilla Yogurt Frosting:
2.5 tbsp Neufchâtel (reduced fat) cream cheese
1c plain nonfat Greek yogurt
1/2 scoop About Time vanilla protein (opt)
4-5 pkts stevia
1/2 tsp vanilla

-Food process the first 2 ingredients. Then add carrots and process more. If you don’t have a food processor, then shred the carrots up with a cheese grater and blend it all on high.

-Whisk the rest of the ingredients together and combine with carrot mix. Mix well and place in baking cups in a cupcake pan. Bake at 350F for about 16-17min. Let cool completely before frosting.

Frosting:
Mix together ingredients and beat until smooth. Place in fridge to firm up while cupcakes are cooling.

🍥Frost and top with your favorite topping! I places some unsweetened reduced fat shredded coconut on mine.

Makes about 9 cupcakes. Macros per cupcake with frosting (Approx): 118 cals, 1g fat, 19g carbs, 2g fiber, 12g sugar, 11g protein.

GRAIN FREE PROTEIN PANCAKES!! Diet plan friendly too!! I had to come up with a recipe that fit my macros for a meal consisting of carbs, fibrous veggies, and protein. Sometimes a girl gets tired of rice, chicken, and broccoli…am I right?? So I have put together these Lean ‘n Green Protein Pancakes!!! Great stack for getting that morning (or anytime) energy while still burning that fat! They are super moist and you can’t even taste the spinach! SCORE!

Flourless Lean ‘n Green Protein Pancakes

Pancakes:
5 oz sweet potato, cooked
1 large handful of spinach (approx 1-2 cups)
1 egg white
1 scoop @TryAboutTime Vanilla Whey Protein
1 tsp baking powder
1 tbsp stevia
1/2 tsp vanilla
Cinnamon & nutmeg to taste, opt.

Filling:
1.5 tbsp nonfat plain Greek yogurt
1 tbsp @TryAboutTime Vanilla Whey Protein
-Stir together.

Toppings (optional):
1/2-1 tbsp melted NutiLight sugar-free gluten-free Hazelnut & Cocoa Spread
Sliced Bananas

Directions:

-Blend or food process pancake ingredients all together.

-Cook in a sprayed pan.

-Layer with Protein Filling, and add your toppings. I topped these with NutilLight which is a yummy alternative to Nutella! High in fiber and sugar-free (with natural sweeteners).
