Healthy Rice Krispie Cookie Dough Bars!

I love putting fun combos together! I mean, who doesn’t love Rice Krispie treats and cookie dough???

For the rice krispies, I have removed the traditional high glycemic Rice Krispies cereal, high sugar marshmallows, and butter. Instead, we are using low glycemic Puffed Rice Cereal, natural peanut butter (healthy fats), and agave which is lower glycemic. Honey can be used as well.

No cooking except for heating up a few ingredients in the microwave! Now that’s sweet!

Best of all, only 10g net carbs & 13g protein per bar!

Healthy Rice Krispie Cookie Dough Bars

– 1 Quest Nutrition Chocolate Chip Cookie Dough Quest Bar
– 1/2 c Puffed Rice Cereal
– 1.5 tbsp Natural Peanut Butter
– 1/2 tbsp Agave or Honey
– 1/4 tsp (splash) Vanilla

Cut Quest bar in half & microwave for 10 seconds to soften. Press into a square bar pan or cupcake pan.

Microwave PB, agave, vanilla in a bowl for about 30 seconds until melted. Stir in cereal Make sure all the cereal is coated. If it isn’t binding enough, then add a little more PB or agave.

Split mixture in half & press on top of each Quest bar in the pan. Refrigerate for at least 2 hrs in order for it to set up.

Remove from pan and enjoy! I topped mine with just a little melted sugar free chocolate chips 🙂

Makes 2 bars. Macros per bar without chocolate drizzle: 196 cals/ 10g fat/ 20g carbs/ 10g fiber/ 5g sugar/ 13g protein.

It’s not my birthday, but I’m celebrating someone’s out there with my breakfast of Eggy Oat Doughnuts with Birthday Cake Protein Frosting!🎂🎉

🍩Doughnuts:
1/2c oats
6 egg whites
1/2 tsp cinnamon
1 tbsp sugar free maple syrup, honey or agave (I used Ali’s Natural Sugar Free maple syrup)
1 tsp baking powder
1 pkt or 2 tsp stevia
1/2 tsp vanilla

🎉Birthday Cake Protein Frosting:
1 tbsp nonfat plain Greek yogurt

1 tsp unsweetened almond milk
Splash of Vanilla
Sprinkles!

Food process the oats to turn it into oat flour. Add remaining doughnut ingredients and process or beat all together. Pour into greased doughnut pan. Bake at 350 F for 10-12 minutes. Remove & let cool. Then mix frosting ingredients together & top doughnuts! Add your sprinkles and sing 🎵Happy Birthday🎵 😊

These protein, low sugar, low carb brownies are sure to satisfy your chocolate cravings!! I’m using the new yummy Cookies ‘n Cream Quest Bar too!! Quest Bars are simply amazing! These low carb protein bars tastes like a candy bar to me! Plus they are all natural which makes me even happier!

One note about this recipe is that I used 2 different kinds of protein: Whey & Casein. The reason for this is because I prefer to bake with casein over whey, but I also like a blend of both. Casein is thicker and just seems to cook better than whey. Whey seems to sometimes make the product turn out too dry. So you are welcome to use one or the other (or both like me!), but your texture may turn out different. It’s not always easy to cook with protein powders, so don’t beat yourself up if the finished product doesn’t look like my pictures.

-1 scoop About Time Chocolate Whey protein
-2 scoops About Time Zz Chocolate Casein protein
-1/2 c stevia
-1 tbsp baking soda substitute (if using regular, then omit the dash of salt)
-2 dashes of salt (about 1/4 tsp)
-1/2 c almond flour/meal
-1 tbsp cocoa
-3 egg whites
-1/2 c unsweetened almond milk
-1 tsp vanilla
-2 Quest Nutrition Cookies ‘n Cream Quest bars, cut into squares
-Optional: 1.5 tbsp Lily’s Dark Choco Baking Chips (low sugar & sweetened w/ stevia). Find it at Vitacost.com

♦Stir dry ingredients, then stir in wet ingredients.
♦Pour into oil sprayed 8×8 baking dish
♦Bake at 350F for 7min. Remove from oven then add the Quest Bar squares and push down slightly. Return to the oven for 4 more minutes.
♦Remove from oven and let cool.
♦Cut into 16 squares.
♦Drizzled with Lily’s Dark Chocolate Baking Chips, melted. (Optional)

Macros per brownie without choco drizzle: 1 bar = 96 cals, 4g fat, 7g carbs, 4g fiber, 1g sugar, 11g protein.

Chocolate Coconutter Peanut Butter Protein Cups

I absolutely love peanut butter cups!! I was determined to make my own for a quick and easy treat! I added casein protein to mine to boost the protein content, but it is completely optional. Casein is a much thicker protein than whey (as it is slower digesting) so it holds up better in this recipe. I recommend About Time Zz Night Time Recovery formula! You can purchase 2 different flavors: Peanut Butter or Chocolate. It definitely satisfies the sweet tooth while staying on track. Perfect for your dessert/last meal of the day.

Chocolate Coconutter Peanut Butter Protein Cups

Makes 1 delicious serving.

1 tbsp Sweet Spreads Chocolate Brownie coconut butter

2 tbsp any flavor Casein protein (I recommend About Time Zz Peanut Butter flavor), mixed with water. But the Protein layer is optional!

1 tbsp PB2, mixed with water.

2 tsp Natural Chocolate PB spread, melted & drizzled on top.

-Microwave the coconut butter for a few seconds. Spread it on the bottom of a cupcake pan. You can also line it with a foil liner.

-Stir your casein protein with about 2 tbsp. of water. You want it to be thick. Add it to the top of the coconut butter layer.

-Mix your PB2 (powdered peanut butter) with about 1/2 tbsp of water. Again, you want it to be thick and not runny. Place it on top of the casein layer.

-Finally, melt your chocolate peanut butter spread in the microwave for a few seconds, then drizzle on top of your PB cup.

-Place the pan in the freezer for 45 min. Remove and enjoy!

Macros: 266 cals/16g fat/14g carbs/4g fiber/6g sugar/17g protein

Oh this is one of my favorite protein pancake recipes!! Just love blueberries 🙂

Blueberries & Cream Protein Pancakes

1/3c oats
1 tsp baking powder
2/3 scoop About Time vanilla whey
1 tsp cinnamon
1 tbsp stevia
1 tbsp 1% cottage cheese
2 egg whites
1/4 banana

-Beat all in a blender or food processor. Cook in a pan coated w/ oil or spray.

Cream:

1/3 c 1% cottage cheese
1 tbsp stevia
1/4 tsp vanilla
1 tsp About Time vanilla whey

-Beat all together well.

Blueberry Compote:
1/4c blueberries
1/2 tsp cinnamon
1 tbsp Ali’s Natural Sugar Free Syrup
1 tbsp water

-Simmer in a small pot covered until berries are soft.

-Layer pancakes with cream filling and also top it. Add blueberry compote and enjoy!

1 scoop About Time Cinnamon Swirl Whey Protein
1 pkt or 1 tsp Stevia

Topping:
2 tbsp plain nonfat Greek Yogurt
1 pkt or 1 tsp stevia
2 squares of About Time Granola Clusters
Drizzle of Sugar Free Maple Syrup
Sprinkle of Cinnamon

Cook oats and about 1/2c water in the microwave for 1.5-2 minutes.

Let cool slightly, then stir in About Time protein.

Mix yogurt and stevia together. Add on top of oats. Crumble the granola squares and top, along with syrup and cinnamon.
